Bacon & tomato guacamole

  • Fresh avocado
  • 5 slices thick bacon;
  • 3 medium avocados;
  • 1 onion, diced; or onion powder if you are not a fan of onions
  • 3 chipotle chilies, seeded and finely chopped;
  • 1/2 jalapeno seeded, and finely chopped;
  • 1 large tomato, chopped into 1/4-inch pieces;
  • 1/2 cup fresh cilantro, chopped and stems removed;
  • 2 tbsp lime juice;
  • Sea salt and freshly ground black pepper to taste;

Preparation

  1. Cook bacon to your liking, grilled on the BBQ is recommended
  2. Pat the bacon dry and crumble it.
  3. Place the avocado flesh in a bowl and mash it with a fork.
  4. Add the onion, chilies, tomato, cilantro and crumbled bacon. Season to taste with salt and pepper, add the lime juice and stir well to combine all the ingredients.
  5. Serve immediately of reserve in the refrigerator with a plastic wrap touching the surface of the guacamole to prevent oxidation.

This is the BEST GUACAMOLE EVER! I found the original  recipe on paleodietlifestyle.com, But i decided to tweak it a little.  The recipe listed above is my own version, I used onion powder instead of onion, I added another chipolte chili, and I added the jalapeno for some spice! Feel free to tweak it to your taste, make it and tell us how it turned out!! We ate it with Juanitas brand corn chips, and some grilled steak! YUUUUM!!

These are one-arm squat snatches, alternating arms.
